The View From Here

Ivy has goopy eyes and a runny nose. It's very sad, so I'm making her favorite for dinner.

Lentil Stew.


Or as Sylas likes to call it...

Money Soup.

What's on your plate?


"MONEY SOUP" Recipe

2 tbsp. olive oil
1 chopped onion
3 cloves minced garlic
3-4 sliced carrots
2 stalks chopped celery
5 whole sun-dried tomatoes, chopped
A 6 oz. can of tomato paste
72-80 oz. vegetable broth*
1 lb. dry lentils
A 14 oz. can diced tomatoes with their juices
2 tsp. fresh oregano/1 tsp. dried
1 tbsp. fresh basil/1/2 tbsp. dried
1 tsp. kosher salt
1 tsp. pepper

Saute onions in the olive oil over medium heat, add the rest of the ingredients and bring to a boil. Turn down heat and simmer, uncovered for about an hour and half stirring occasionally.

ENJOY! Ivy sure does!

*It's cheapest to make your own veggie broth, but if that's not your thing, Trader Joes has a fairly inexpensive organic veggie broth.

P.S. This makes a HUGE pot. We always have leftovers and enough to freeze for another meal.

  2. baby's plate includes baby chili (made with chicken broth instead of tomatoes) - our 11 month old is also sick - with a UTI and a fever that simply will not break.

  12. Might have to try that recipe, and I love your tip for saving time by buying vegetable broth......but I have to laugh, because when I'm pressed for time, I don't make recipes with more than 5 ingredients. I wouldn't even attempt this one if I were pressed for time!

  13. I hope she's feeling all better soon! When I was pregnant with Ivy ALL I could keep down was my Mother in law's lentil soup! She makes it super brothy, like a puree!
